I made it with 100% green tomatoes last year (http://milkingweeds.blogspot.com/2010/11/green-tomato-catsup.html) - they have to cook a bit longer. Fair warning: whether green or ripe, the cooking down process takes a looong time! It's good to start in the morning and keep the pot on low all day til the ketchup is thick!Milkweedhttps://www.blogger.com/profile/08358496166576984299noreply@blogger.comtag:blogger.com,1999:blog-5868856291902994549.post-4743345349214276562011-10-01T09:03:02.297-04:002011-10-01T09:03:02.297-04:00Before tomatoes are no longer in season, I am goin...Before tomatoes are no longer in season, I am going to make a batch of this, even if just one bottle. I live in a small town in southern Italy and there is only one brand of Catsup in the supermarket - lucky to even have that - but it is too sweet, so I am going to try my own.
I may mix in some green tomatoes, as Italians prefer their tomatoes mostly green for salads.
Thanks for the recipe.anna mariahttps://www.blogger.com/profile/03053997040371741100noreply@blogger.com
