These collards (pictured above and below, photographed today) were covered with a foot of snow for more than a week, and they are definitely not as lush-looking as collards in the height of summer, but they taste so sweet from the cold! Apparently, plants convert starches to sugars with cold temperatures, so winter greens in the brassica family are often far sweeter than those harvested in summer.
Brassicas and chard leftover from summer are about the extent of our winter harvest these days. But in related news: the hoophouse is almost ready for our first Eliot Coleman-style attempt at starting cold-hardy greens in winter for an ultra-early spring harvest. Eventually, the goal is 4-season harvest of a wide variety of salad and cooking greens, root crops, and some of the other more cold-hardy vegetables.
In the meantime, we have collards in late December, thanks to the power of mulch, the natural fortitude of the collard plant, and farmers and gardeners long ago who selected these varieties over time for cold-hardiness.
Winter greens are such a welcome treat. My old friend Andrew was in town last night and we shared a hearty winter meal of fresh sauteed collards, black beans that we grew and last summer, and Flying Cloud Farm sweet potatoes, all seasoned with a healthy amount of Creole garlic cured last July. Yum.

Sounds like we've been worrying too much about covering our collards, brussel sprouts, greens, and chard, and should just let them go.

Nice blog and content. I think you will really like your new hoophouse to extend your growing season, or to grow food in during winter. Following Coleman's advice, we converted one of our unheated small hoophouses (10' x 35') into a winter greens house with much success. Every year, we plant kale, spinach, and other cold hardy greens in three of our six 4'x8' raised beds around the beginning of September, then plant the other three beds in early October. The crop planted in September reaches a nice height by December and we're able to harvest greens throughout the winter from these beds. At night we provide an additional layer of insulation to these three beds using a spun-bonded blanket that protects an additional eight degrees or so. The other three beds of greens, which we do not cover with the blanket during the winter, basically go dormant and start growing again in late winter/early spring...just in time to provide a continuous supply of greens since we've already made a pretty good dent in the other three beds.
I didn't cover anything this year. I hope my kale lives through the winter. So far we have had a nice blanket of snow, but it is starting to melt.
Lovely, lovely collards, lovely, lovely blog! Here in Colorado, much is still covered with last year's snow (and what isn't, has been nibbled down by deer).
